If you’ve been dreaming of a luxury cottage getaway, we may have found the perfect fit for you. Oh, and it’s in wine country. That never hurts. Surrounded by rolling grapevines and picturesque farmland, Carneros Resort and Spa is home to 100 cottages, suites, and residences and provides a luxurious getaway in the heart of Napa Valley.  Each of the resort’s cottages has 400 square-feet of living space and up to 800 square feet of outdoor living space, depending on your selected accommodation. Guests enjoy an intimate candlelit dinner alfresco on the patio or can opt to sit indoors and cozy up near the fireplace. Depending on the time of year, you cannot go wrong with either choice.

Families are always welcome, but for adults looking for some tranquility, they can enjoy the adult-only Hilltop Pool surrounded by unprecedented, panoramic views of the Napa Valley countryside. As somebody who eats and travels for a living, when I visit in a city I habitually avoid the food at my hotel and opt for a more authentic dining experience in the surrounding neighborhoods. More often than not, inter-city hotel food is unimaginative, overpriced and underwhelming. Divorced from the surrounding food culture, hotel food usually leaves something to be desired. This couldn’t be further from the truth for the Henrietta Bistro at the Henrietta Hotel in Covent Garden, London’s vibrant epicenter for open air markets, street performances, speakeasy cocktail clubs and trendy restaurants.

Headed by Chef Sylvain Roucayrol of Perpignan, Henrietta Bistro boasts a menu focused on food from south-western France, Basque country and Catalunya, Spain. Roucayrol, who studied under world renowned French chef Daniel Boulud, expertly weaves ingredients and techniques from these regions to create tapestry of flavors that can best be described as bold yet elegant, beautiful plates that jump back and forth between rustic and refined. Portrayed as a tapas restaurant, it would be dishonest to call the portions small. Densely packed with flavor and color, even the most delicate dish like the marinated eel with daikon radish is a revelation. Ordering a variety of plates and sharing is however recommended, since the flavors are too varied and unique for one to relegate themselves to a single dish. The burrata, a soft cheese made from mozzarella and crème, served with green zebra gazpacho and strawberry powder is heavenly on its own. When smeared across a few slices of their house made sourdough bread with espelette butter, it transcends to the divine. Grilled octopus cooked sous vide until tender then lightly charred and mixed with heirloom tomato fatoush and sumac chips is in contrast between the savory seafood and the bright crunch of peak season tomatoes. The tuna tartare with truffle and tahini is the perfect end of summer dish where prized line caught tuna is elevated even further with fresh shavings of late season truffles, piled high on top of a smear of toasted tahini.

A true highlight of the menu is the mezcal cured duck liver terrine with grilled bread. Salty, sweet, and as decadent as you’d expect foie gras to be, it is the perfect texture to counter the crunch of the charred sourdough. Lamb cutlets with black olive and aubergine is another example of a simple, expertly prepared dish by Raucayrol and his team, highlighting the freshness and beauty of late summer’s seasonal products.

To come to Covent Garden, or London for that matter, and not patronize the Henrietta Bistro’s bar would be a grave mistake; for their beverages are equally as impressive as their food. A meticulously curated list of classic and contemporary cocktails, vintage spirits and pastis to please the palate and satisfy the senses, without being pretentious or stiff; unless of course you order your drink that way. If you’re staying at the hotel and don’t feel like being social in the lounge or bar area, the in-room mini bar is fully stocked with a variety of premium spirits, beers and wine plus a pre-made cocktail expertly prepared and bottled by the team downstairs. It is also equipped with plenty of fixings to make your own delicious beverages without leaving the comfort of your room.

The Henrietta Hotel is made up if 18 boutique rooms featuring retro furniture and vintage brass fixtures with a few very modern upgrades. Elegant headboards adorn large pillow like beds that leave you feeling as though you’ve been swallowed by a cloud. A word of caution however: beds this comfortable can easily turn a cheeky afternoon nap into a missed dinner reservation. Luckily the front desk staff are not unused to this situation and can help you get a later time slot, or reschedule your dinner altogether so your light nap can easily transition into a hearty slumber.

The Henrietta is part of the Paris-based Experimental Group which is best known for their signature concept Experimental Cocktail Club. As you may surmise, this team knows a thing or two about libations. Two of their other London concepts reside just a few blocks over from the Henrietta in the Chinatown district and are must-sees on your next London food and drink tour. The sister bar to their Paris establishment of the same name, Experimental Cocktail Club offers crafted cocktails to an eclectic clientele, and their third-floor speakeasy called Opium serves late night dim-sum and cocktails from their selection of themed menus well into the night. What’s better than an Umami Martini with siu mai or a Blood Orange Wallbanger with a few steamed BBQ pork buns? At 3am you’d be hard pressed to find a better combination.

Aside from the Henrietta Bistro, Covent Garden boasts a veritable plethora of world-class dining options all within walking distance, several of which are located right on Henrietta Street. Two doors down from the Henrietta is Chef Greg Marchand’s restaurant Frenchie. A modern French brasserie with a sleek and minimal décor, opting for grey and off-white tones that allow the vibrantly colored and flavored food to be the star of the room. Go for the signature bacon scones, and stay for the lamb sweetbreads, pan roasted duck breast, and finish with the selection of raw cheese from the French country side, exquisitely paired with a crisp off-dry Riesling or a Pinot Noir from Burgundy.

Just a few doors down from Frenchie’s is Flat Iron, a rustic steakhouse painted with a quick stroke of modern. A la carte options include a flat iron steak as well as a rib eye plus feature cuts like wagyu skirt steak. The beef fat fries are to die for, paired with a side of steamed English broccoli and a selection of sauces for your dipping pleasure. Their gin & tonic menu is as eclectic as it is uncommon to pair with a steak, but refreshing and delicious none the less. As you leave he restaurant they present you with a mini gourmet ice cream cone, the flavor of which changes regularly, to enjoy as you stroll down Covent Garden’s cobblestone streets.

Another wildly popular London resident is Dishoom, a trendy concept pumping put Bombay style street food alongside a killer cocktail list and some funky Indian groves. The wait at their Covent Garden location can be lengthy, like many restaurants in the area they don’t take reservations so guests must line up rain or shine for a chance to dine. Luckily there is another location in nearby Carnaby which can be a little easier to get into and 5 other locations throughout the United Kingdom. Don’t let the kitschy menu names like the Thunderball cocktail or the Gunpowder Potatoes fool you, the flavors are worth the wait. In a country where chicken tikka marsala is widely considered the national dish, it’s safe to say that Britain loves Indian food and Dishoom is a welcomed escape from the traditional curry houses of London.

You cant’s eat all day if you don’t start in the morning. Across the road from the Henrietta is Avobar, London’s first all-avocado casual dining concept serving up a selection of Avocado toasts, sandwiches, bowls and salads as well as health-inspired beverages such as turmeric and beet lattes and a variety of smoothies. The decor is more reminiscent of a garden then a restaurant with its white washed wood, green mosaic tile walls, hand hammered copper table tops, not to mention the plethora of plants of all shapes and sizes scattered around the room. Whether you’re looking for colorful plates to photograph for your social media feed or you’re just interested in a hearty, healthy meal to energize your day, Avobar is your one stop shop for all things avocado.

Day or night, London’s Covent Garden is buzzing with activity. Locals and tourists alike come to experience the outdoor markets, street performers and vendors.  Whether you’re searching for a night on the town, a feast fit for the Queen, or a beautiful breakfast to fuel your London sightseeing adventures, Covent Garden has everything you’re looking for. Opal sands where the art is infused in the experience. White, white, sand encircled in circles. The structured and the. While the rest of the strand appears to be frozen in time, Opal Sands seems to have taken the guest experience into a time warp. Modern structure in the insulation of a wave while the elevators are black and white glimpses of the Clearwater beaches and scene. Old Florida lives down the street from this new resort. It’s position on the powder-white sand commands attention but what overtakes the dramatic views that stretch all the way to the famed Pier 60 is the art and architecture of the hotel. The floor-to-ceiling glass windows and doors give guests access to the great outdoors before stepping foot on the sand. One of our favorite spots within the hotel is at Sea Guini, an Italian fusion restaurant, as you may have guessed from the name. This restaurant and its bar are encircled by the same floor-to-ceiling open space concept. The happenings here are beyond fun and fabulous food. Try their cocktail and pizza making class. It’s a great way or families and friends to spend an afternoon. We had a group of us sipping and flipping pizzas for well over an hour. The chef may or may not have offered us a job after tasting our heart shaped pizza and mojitos extraordinaire. There’s fun to be had inside and out, right here in Clearwater.

The Salvador Dali Museum is an art museum that offers a vast collection of his works. His ethereal touches and master strokes can be absorbed independently or every half hour there are docents who give deeper insights and understanding to his work. We thought his works stretched our minds, all these years, but get a closer look at some pieces and the expansion will blow your mind. I think the curators of the exhibits and the museum are wanting to play with the style of this artist, just as much as guests are. They have started Yoga at the Dali…now that may seem like a stretch, but to us it sounds like a perfect fit.  Try their brunch! As whimsical as his pieces are there’s a name for this gathering entitled Mimosas and Masterpieces. If you come on a weekday and miss the brunch, you’ll be as equally entertained by the works assembled in the museum.

I flew in from Miami, wanting to be swept away by the beauty I was hearing o much about, here in Belize. Touching down in Belize City, my journey hadn’t ended yet, I needed to get to Ambergris Caye on Tropic Air, another 15 minutes to paradise. Eyes fixed on the shades of aqua that transitioned from light to dark, below the plane, I could tell we were getting close to exactly what I had been dreaming of, The Beach Club at Mahogany Bay Resort. I came to swim, splash, see and be seen, in the hottest new cool spot off the coast of Belize. Moments after touching down, I was on the outside of the quaint Ambergris Caye airport terminal, pointing out my suitcase.

The road, which appeared to be the only one on the island, was abuzz with the whirring of golf carts and clacking of bicycles. As I exited the airport, which took little more than a step off the sidewalk, where my luggage once sat and unto the street to meet my driver, my anticipation settled as I felt we were almost there. Little did I know that three miles on a sandy dirt road could take approximately 15 minutes when it’s the only road to get you to the resort ad, alas, the only main artery on the entire island. It was such a scene, I couldn’t help but smile the entire way. The pace of the golf carts on this two lane “road” intermingled with the occasional automobile and a few bicycles, made for interesting viewing and not too many close calls. These folks knew what they were doing. There’s never a rush hour here…it’s always island time. I figured I’d slip into the island vibe and take everything as it came.

Switching up my vibe from city slicker to island girl was as easy as can be. Pulling up to the replica of great house where the reception and check in desks were located, was a modern take on the old plantation style mansions with luxurious appointments and attentive staff who escorted me to my spacious 3-bedroom cottage, set atop an inlet from the sea. There was no doubt in my mind that I was close to reaching my place, surrounded by water. Slipping out f my travel clothes, picking one of the fab bathrooms, where the indoor showers of these luxe accommodations are lined with zinc, normally found on the roof of far less accommodating accommodations on any given island. The juxtaposition of these very basic elements amidst the dark wood-planked floors and sumptuous furnishings leant a sensibility that was undeniably Caribbean.

Choice of showers made, swimsuit on, sunscreen in hand, I made my way through the other cottages, up to the main entrance where I was almost tempted to pop in to the chocolate shop, or grab an ice cream cone and donut for the ride to the beach club, but then I remembered that a girl must maintain her figure, besides, there was always tomorrow or the next day. My motivation to get to the Beach Club propelled me towards the only way to get there; the resort’s boat. A boat ride to the beach club? Yes, thanks! Cutting through the mangroves in a no wake zone, the captain announced that in only 15 minutes, we would be pulling up to the beach club. Only another 15 minutes to paradise? I can make it. learning about the mangroves and how the yellow leaves are the ones that have filtered the most salt out of the brackish water and will fall off and settle to the bottom to create nutrients and return to the earth. That was an interesting tidbit of knowledge and as we made our way out of the mangroves, into the Caribbean Sea, the dark waters and narrow canal gave way to those bay blue hues. The sun was shining, the engine was roaring and we were riding the waves to my cabana/daybed on stilts. On our approach to the beach club, I could see the handful of these swanky beach accommodations, strewn across the shallow waters of the Beach Club. had arrived!

Hopping off the boat and approaching the bartender who had my reservation for the premium perch, set farthest out in the water than all the others. Given its position off shore, one would have anticipated the water being a bit deeper than the daybed/cabanas a few yards closer to the shore. This was not the case. The 20 inches of water, never got much deeper, making each bed as accessible for the barmen as the other. The service was on point. There was never a moment when I wanted for anything. Before one drink was through, the staff was there to take my next order. Even when I went to shore to grab a stand up paddle board, the team came and refreshed my cushions, towels, and billowing curtain on this elevated perch in the middle of the water. This experience of being 10 feet above the shallow, clear blue water, feeling the breeze caressing my skin and cooling it from the dappled sunlight that warmed the day was unparalleled. I paddled boarded around from daybed to daybed and out to a float that was anchored about 50 yards out in a little deeper water. Lunch was served immediately following this little excursion that I decided to take. All laid out in my elevated perch, I felt like a queen for the day.

Luckily, I was spending more than one night at the resort, so just before sunset, as the last boat back to the resort was heading home, I bid my beach adieu, for the day, knowing I’d be back tomorrow…just after breakfast. Speaking of which, my chocolate chip pancakes were dusted with fresh cocoa powder. The back bacon is thick and delicious. The food in general is exceptional. The hot sauce is made right in property, hot as fire, and is not to be missed. They grow and produce as much as possible here on property. All baked goods, even the donut shop confections are made right here. In fact, Executive Chef, also Food & Beverage Director, is passionate about here work and took an entire evening to prepare a meal for me, and join me in eating it. When she heard I was from Jamaica, she purchased a ripe sour sop and made me the best sour sop ice cream. There is an unreal level of service and attention to detail at this resort. Jyoto Japanese restaurant blew me away. Chef Toshiya Tsujimoto has made his mark here at his new home. The sushi cannot be any fresher and the presentation is art meets culinary excellence. Dining at the resort is as diverse as it is rich.

Having to watch my figure was now a thing of the past. I rode a bike around the property, exploring and seeing its growth. I felt like that was enough exercise for me to make my return trip to the Beach Club and feel fit. I made my reservation for my special spot in the water, cabana 4, shhh, don’t tell them I told you but it’s a must. Book it way in advance and enjoy your time at the Beach Club. Do this and experience exclusivity to the max. Paradise is only 15 minutes away.

Great vibes, good food and picturesque settings were also high-scoring when selecting Tamarindo as of the trendiest Surf towns in Latin America. The bustling village located in Guanacaste, Costa Rica’s dry forest and smacked between the quieter Playa Langosta and Playa Grande is also a great introduction to the true meaning of “pura vida.”

The town’s beach is ideal for beginner surfers trying their luck in the water for the first time (seasoned surfers will cheer you on), and within a short distance from many wildlife experiences. The après-surf fun starts at dusk when passersby gather ashore to witness the sunsets while sipping on an Imperial and nibble on freshly-caught seafood. Nightlife in Tamarindo is also active with small lively bars filled with locals and visitors alike.

Accommodations have also gotten an upgrade in this once sleepy fishing village. Change your backpacker’s hotel for a luxe, wellness-filled retreat at Cala Luna. Located within Las Baulas National Park (which protects leather back sea turtles), the boutique hotel boasts stylish rooms, organic food, a holistic spa, some of the friendliest locals around and daily yoga/workout classes. The hotel’s General Manager, one of Costa Rica’s top pro surfers, Federico Pilurzu has injected his laid-back style and casual approach to hospitality to Cala Luna. There, staff members treat guests as more than a number and go above and beyond to make them feel at home.

Food in Tamarindo is not an after thought and many restaurants use local, organic produce. Grab a coffee at Café Tico before a wild adventure and re-energize at Sprout featuring salad bowls and veggie wraps. Other notable spots are Seasons by Schlomy and Green Papaya.

There’s also a lot to do, from a Yoga class at neighborhood studio, Ser Om Shanti to horseback riding at La Senda, a magical farm which also houses one of the world’s largest meditation labyrinths, to zip lining through the jungle or sailing through wonderfully pristine and lush beaches, Tamarindo’s got it.
